Food Scientists from Grande Custom Ingredients Group (GCIG), an industry leader in the production of whey ingredients for the food and beverage industry, will highlight the use of Grande® Grade A Yogurt Powder and Grande Bravo® in dips, dressings and sauces. The functionality of the ingredients makes them ideal for new applications, or as replacement ingredients for existing products that improve quality while maintaining the authentic flavor and creamy texture consumers demand.

RCA’s Annual Conference and Culinology Expo takes place March 21-24 at the H.B. Gonzalez Convention Center in San Antonio. The annual event draws more than 1,200 innovative food developers to share ideas on the discipline of culinology, which blends culinary arts and food science.

To create the Garlic Cilantro Yogurt Sauce featured on the mini Greek Taco, the food scientists at GCIG used Grande® Grade A Yogurt Powder to reduce the sour cream and yogurt. The new formulation uses one-third less sour cream and half the amount of yogurt, yet still has the authentic yogurt taste and creaminess of the original. Additionally, total fat and saturated fat were reduced by 33 and 50 percent, respectively.
Product formulations for Grande Bravo® are just as compelling.
An application replacing the cream in Alfredo Sauce with Grande Bravo® resulted not only in reduced fat and calories, but a boost in the nutritional value as well. With a 50 percent replacement of the cream, calories were reduced by 22 percent and total fat by 27 percent while protein increased 150 percent. In a 100 percent replacement, calories and total fat were reduced by 45 and 64 percent, while protein was again boosted by 150 percent.
In addition, replacing the cream with Bravo results in significant cost savings.
