Using ingredients from his local farm in Pahrump, Nev., Chef Geno entices appetites with the farm to fork salad, prepared with Nove's private farm mixed greens and tossed with strawberries and goat cheese, and the spring brodo, a delectable soup made daily. For entrées, the menu showcases grilled Thai snapper, served with a colorful assortment of artichokes, fingerling potatoes and olives, and the mouthwatering veal osso bucco, plated with saffron risotto, pea shoots and gremolata.
