Nikai Goes Wild: Restaurant owners launch new concept

(Jackson, Wyo.) - In October, the Nikai Asian Grill & Sushi Bar on North Cache closed its doors for what many thought was a simple renovation, but the restaurant will open its doors tonight with a new name and a completely new concept. The spot, now named Wild Fish and Game, retains the same ownership but chose to update the concept to better fit with the local lifestyle. "Ownership decided that they wanted to turn the restaurant into something that is more targeted to what people come to Jackson for," said Dustin Davis, general manager of Wild Fish and Game. "People come to Jackson to see the last of the Wild West, we even put that on our signs. They love the wildlife and everything about it ,so we wanted to give people that kind of experience." [image: Inline image 1] The interior of Wild Fish and Game looks similar to Nikai, with most of the renovations focusing on the bar area. They have put in a community table, extended the bar top, and added a raw bar to include three types of oysters on the half shell. "We want to make the bar a more fun and casual experience," said Davis. The management has also spent a significant amount of time creating specialty craft cocktails and invested in a new, better ice machine for drinks. Under the helm of Chef Cooper Craighead, the restaurant will specialize in fish and wild game small plates, to include quail, a petit bison filet, rabbit, duck, Escolar Ceviche, King Salmon Crudo and more. "For all of the sushi fans out there that might be upset, we will still have a roll of the day," Davis added. Tonight, Wild Fish and Game will officially open its doors at 5 p.m. "We are just ready to show Jackson what we have," said Davis.
