Chaz on the Plaza appoints Shawn Hartwig as new executive chef
Hartwig brings nearly 20 years of culinary experience and American cuisine expertise to his new role at The Raphael Hotel’s signature restaurant
KANSAS CITY, Mo. (Nov. 1, 2018) – Chaz on the Plaza, the signature restaurant of the historic Raphael Hotel, is pleased to announce Shawn Hartwig as its new executive chef. With a culinary career spanning nearly 20 years, Hartwig brings with him a plethora of knowledge and American cuisine expertise from working in restaurants across the Midwest.
"We are super excited to bring Chef Hartwig aboard," said Craig Schroeder, general manager of The Raphael Hotel. "Shawn possesses an incredible mixture of experience, education and foresight – our customers are not only going to love his food, but his personality as well,” said Schroeder.
A Minnesota native, Hartwig comes to Chaz on the Plaza from Topeka, where he worked as executive chef at the highly esteemed Topeka Country Club since 2014. Before that, Hartwig was the corporate executive for Gastronomy Rooms, Inc., while working as executive chef and partner at The Turf Room Restaurant in North Aurora, Illinois. Hartwig’s culinary experience also includes three years as executive chef for The Newsroom Restaurant in his hometown of Minneapolis, Minnesota, before he became a partner in the restaurant company.
Chef Hartwig specializes in contemporary American cuisine, with a cooking style rooted in French fundamentals. In his new role at Chaz on the Plaza, Hartwig will focus on elevating classic dishes with a modern vision and new techniques. Hartwig’s responsibilities as executive chef also include culinary team leadership, menu development, sourcing ingredients, food quality, in-suite dining and banquets for The Raphael Hotel, and culinary reputation management.
“I have stayed at The Raphael Hotel and dined at Chaz on the Plaza a number of times and always appreciate the level of service,” said Hartwig. “I am excited to be a part of such a renowned landmark and look forward to surprising regular guests, and delighting new ones, by providing one of the top culinary experiences in Kansas City.” said Hartwig.
With a deep passion for cooking from a young age, Hartwig completed his culinary education at the St. Paul College in 2003 and holds a bachelor's degree in Psychology from the University of Minnesota. He apprenticed under master chef Ron Bonhert in Stillwater, Minnesota, and trained at St. Malo in France.
