*(Fremont County, Wyo.) *- Look, we know that there are plenty of Wyomingites that grill and smoke all year ‘round -- this post isn’t for you. This post is for the average Jane or Joe who wants to enjoy the longer days and warmer weather with some friends but needs some motivation! When you drive around town, there are way too many grills that have nothing sizzling. So now we have no excuses, get out there Wyoming - here’s your BBQ Checklist! *The Hardware* Picking a grill can be daunting, so many to choose from and so many different prices. Look, you might be a master at the grill, but not everybody needs chrome, 12 burners, led lights, side stations and built in satellite radio! Think about what you like to grill and how you want to cook it (grill, smoke, or bake) and how many people you usually cook for when you’re grilling. It’s that easy. Here are 2 different options: *The Spirit grill is perfect for the beginner, budget-conscious food lover and those who just want a solid second grill gracing their backyards!* *The Big Green Egg is a great option for any griller. You can grill, bake and smoke meals for family and friends!* **Don’t forget your grill kit! Regular utensils just aren’t made for BBQ-ing. You can choose your weapons a la carte or in convenient kits. It doesn’t have to say something goofy on it, but an apron sure does come in handy when char, juice, rubs and marinades are all concerned! *The Software* Choose your menu according to your tastes and the event. It might not make sense to smoke a turkey for dinner on a Tuesday, but maybe burgers are too simple for your tastes. Whatever you choose, try to select a menu that can be mostly cooked on the grill. If you’ve never done vegetables or side-dishes BBQ-style, it’s time to expand those horizons! Avoid the heat of cooking inside and add some serious flavor. Don’t forget the drinks. Instead of the traditional soda (or, “pop” depending on whether you were born here or not) and beer, try a punch or sangria in a pitcher to avoid all those trips to fridge or cooler. *Here’s one of our favorite menus: * *Grilled Walleye Filets* 1. Brine filets in the refrigerator in a mixture of milk, water, and lemon juice for at least 30 minutes before you grill them. 2. Then pat them dry and sprinkle both sides with a Fish Rub. 3. Grill the filets on a grill mat or a piece of aluminum foil at about 400°F for 4-5 minutes per side or until the fish flakes with a fork. Remove from the grill and drizzle with lemon juice.
