Barrel 31 welcomes locally recognized Kansas City chef Eric Carter as new culinary leader

With more than 10 years of experience, Carter brings credibility and American cuisine expertise to Union Hill as Barrel 31 approaches first anniversary

KANSAS CITY, MO. (Jan. 15, 2015) – Entering its tenth month of operations, Barrel 31, Union Hill’s newest bourbon and whiskey bar and full-service American restaurant, welcomes Eric Carter as its new executive chef. Carter’s role will include complete kitchen leadership with a focus on high-quality ingredients and consistent dishes, front-of-house operations, and building on the overall dining experience at Barrel 31. Additionally, Carter intends to implement a complete menu makeover, with plans to launch in early spring 2015.

Carter brings with him credibility and expertise in American cuisine from across the Midwest. A Nebraska native, Carter graduated with an associate of applied sciences in culinary arts at Southeast Community College in Lincoln, bringing his talents to Tulsa, Oklahoma, as well as Kansas City. Most recently known as executive chef at Providence New American Kitchen in the Hilton Hotel President, Carter’s Kansas City experience also includes previous roles at OP1906 in the Overland Park Sheraton Hotel and The American Restaurant, as well as stints at Blue Bird Bistro and The Drop Bar & Bistro.

Quickly approaching is Barrel 31’s one-year anniversary. The restaurant officially opened March 31, 2014, in Kansas City’s Union Hill district at 400 E 31st St. The remodeled 120-year-old building encompasses Barrel 31’s unique urban atmosphere, seating approximately 150 diners in a 3,000-square-foot space that includes three separate floors and one of Kansas City’s largest outdoor patios.
