RIVEA Executive Chef Bruno Riou at monthly event atop Delano Las Vegas
LAS VEGAS (January 11, 2016) – RIVEA, Delano Las Vegas’ stunning 64th-floor restaurant by Michelin-decorated chef Alain Ducasse, will debut its new cocktail-pairing dinner series, a testament to the restaurant’s elevated mixology overseen by the award-winning Proprietors LLC, on Friday, January 15. The series will continue on the first Friday of every month, each featuring a distinct theme and pairings.
Proprietors LLC, the masterminds behind the cocktail program at RIVEA and the adjacent SKYFALL LOUNGE, have become leaders in mixology and nightlife across the country, opening and operating six noteworthy venues including New York City’s Death & Co. and The Walker Inn in Los Angeles.
Collaborating with RIVEA Executive Chef Bruno Riou, the Proprietors team will expertly design cocktails to match and accentuate the flavor profiles of Chef Riou’s exquisite cuisine each month. The four-course menus will include a selection of signature dishes, in addition to creations exclusive to the series.
The first installment’s theme is Saint-Tropez, offering dishes that embody the fresh and light flavor profiles true to the Riviera, such as Marinated Seabream accented by notes of citrus; a savory Trio of Niçoise-Stuffed Baby Vegetables; and RIVEA’s take on Saint-Tropez’ classic dessert, the decadent Tropezienne,

Following the kickoff in January, the next three dinners will feature ingredient-focused themes (subject to change): Winter Black Truffle (February 5), Artichokes (March 4) and Peas/Asparagus (April 1).
