FORT LAUDERDALE, FL – Chef Andres Avayu of Piccolo Ristorante in east Fort Lauderdale is one of six ‘Green Gourmet’ chefs invited to sample and present Sea Delight’s responsibly sourced seafood at the Guy Harvey Conservation Village at the Tortuga Music Festival on Fort Lauderdale Beach on April 12 – 13.


Chef Avayu will be showcasing tuna provided by Conservation Village participant Sea Delight, LLC, the Miami-based importer of the finest in responsibly sourced seafood. On Sunday, April 13 at 2:30 p.m., under the Guy Harvey Conservation Village tent, Chef Avayu will be preparing and providing for sampling a Tuna BLT. It will include a nicely seasoned slice of seared tuna on a butter bib lettuce with a sweet and semi-spicy tomato jam and a slice of pancetta, finished with a balsamic reduction and served open faced on a basil flat bread. This tuna is handline caught and sourced from a Fishery Improvement Project in Indonesia. Sea Delight is honored to also be providing handline caught snapper and grouper for Big Chef Online and the Art Institute of Fort Lauderdale’s cooking demos throughout the weekend.  To learn more about this fishery, please visit
