Barrel 31 announces new menu created by new Executive Chef Eric Carter as restaurant approaches first anniversary

New dishes and subtle changes revamp the menu

KANSAS CITY, Mo. (March 11, 2015) – Quickly approaching its first anniversary on March 31, Barrel 31 unveils a new, fresh menu featuring more than 20 additions. After two months of improving in-house operations and dish consistency, Executive Chef Eric Carter’s new menu includes completely new dishes, as well as subtle changes to some existing dishes.

Known for its whiskey and bourbon offerings, Barrel 31’s new menu pulls from the restaurant’s roots, featuring bourbon and whiskey flavors and suggested drink pairings for signature entrée items.

Subtle changes to the menu include altering Barrel 31’s proprietary burger blend to include ground chuck and dry-aged brisket, as well as Chef Carter’s addition of a signature Barrel 31 sauce to select burgers and entrées. Additions to the menu include the introduction of all brand new salads and dessert options, as well as multiple new appetizers, sandwiches, burgers, entrées, and sides.

Fried Green Tomato – Cornmeal Crusted Tomato, Mustard Caviar, Green Goddess Dressing

House Smoked Chicken Wings – Carrots, Celery, Green Goddess Dressing. Choice of Bourbon BBQ or Spicy Buffalo

Pickled Chilled Shrimp – Gulf Shrimp, Citrus, Fennel, Chile Toast

Pork Shoulder Sliders – House BBQ Sauce, House Pickles, Smokey Slaw

Smoked Duck Poutine – House Cut Fries, Smoked Duck Gravy, Local Cheese Curds

House Fried Pork Rinds – House Made Pork Rinds, Salt & Vinegar Powder, Fried Peppers

House Cured Meat Board – Bone Marrow, Country Ham, Duck Prosciutto, House Pickles, Pastrami Mustard
