Get a Taste of Spring at Culinary Dropout’s Five-Course Craft Beer Pairing Dinner Featuring Ballast Point Brewing Company

Las Vegas – Culinary Dropout, located inside the Hard Rock Hotel & Casino, continues its popular spring brewery series with a five-course menu paired with flavors of San Diego-based Ballast Point Brewing Company for $45 on Thursday, April 23 at 7 p.m.

The beer-inspired menu designed by Culinary Dropout’s Executive Chef Mike Sutton, will take guests on a culinary journey while also exploring the art of craft beer. Menu highlights for the evening include Scallop Ceviche paired with Ballast Point Grapefruit Sculpin, Crispy Duck Confit paired with a Tongue Buckler and more.

 The complete menu for the prix fixe pairing event includes:


Scallop Ceviche with grapefruit, fennel, yuzu kosho, thai basil and crispy taro

Craft beer pairing: Ballast Point Grapefruit Sculpin, an easy-drinking IPA with fresh tart grapefruit flavor

 First Course

Mediterranean Branzino with heart of palm, haricot vert, house bacon and Meyer lemon

Craft beer pairing: Ballast Point Fathom, a refreshing yet flavorful West Coast-style IPA with hints of citrus and pine aromas

Second Course

Crispy Duck Confit with spring onion hash, medjool date and watercress

Craft beer pairing: Ballast Point Tongue Buckler, hops and malt are in extreme abundance in this bold and exceptional imperial red ale

 Third Course

Grass-Fed Bison Tenderloin with forbidden rice, fiddlehead fern, heirloom carrot

and madras coconut curry

Craft beer pairing: Ballast Point Indra Kunindra, a unique collaboration with award-winning home brewer Alex Tweet, the India-style export stout is an explosion of South Asian flavors


Espresso Mousse with porter whipped mascarpone, lady finger crumble and hazelnut toffee

Craft beer pairing: Ballast Point Victory at Sea, infused with whole vanilla beans, this imperial porter is both bold and smooth with subtle roasted notes and sweet caramel undertones

Pricing for the single night event is $45 per person plus tax and gratuity. Seating is limited; reservations are required and can be made in person or by calling (702) 522-8100. Culinary Dropout is open seven days a week: Monday – Friday from 11 a.m. to close, Saturday and Sunday from 10 a.m. to close.
