Jax Fish House adds cobia, a hard-to-find, sustainable white fish rich in omega-3 fatty acids, to its menu for February’s American Heart Month

Executive Chef Sheila Lucero sources the cobia from Open Blue, the world’s largest open-ocean aquaculture farm

Kansas City, Mo. (Feb. 11, 2015) – For a limited time, Jax Fish House & Oyster Bar has added cobia, commonly known as lemonfish, to its menu. Cobia is known for its firm texture and mild flavor and can be prepared raw or using a variety of cooking techniques. Executive Chef Sheila Lucero is preparing the cobia featured on Jax’s menu by pan searing it and serving it with potato purée, rapini, trumpet mushrooms, and anchovy persillade. The dish is currently featured on Jax’s menu and Bowman plans to keep it on the menu through March.

A fish rich in omega-3 fatty acids, cobia is a healthy option for diners during February, American Heart Month. According to the Mayo Clinic, omega-3 fatty acids may reduce inflammation in the body, helping guard against the damage of blood vessels, which can lead to heart disease.

To source Jax’s cobia, Lucero partners with Open Blue, the world’s largest open-ocean aquaculture farm. Open Blue raises the cobia from egg and never genetically alters the fish in any way, making it highly sustainable. Furthermore, the cobia are cultivated in deep, pristine ocean waters, up to 220 feet deep, eight miles off the shores of Panama in the Atlantic Ocean.
