What: Barrel 31 will host a traditional pig roast on Saturday, April 25 on its expansive outdoor patio, complete with food and drink specials for all in attendance. The 50-pound pig for the event was organically raised in northwest Missouri, and will be brined in bourbon with molasses and aromatics for two days prior to roasting. The pig will then be deboned and stuffed before roasted whole and carved by Executive Chef Eric Carter. The dinner will be served family style along with Carter’s smoky coleslaw and homemade salt and vinegar chips for $16 while supplies last.
All day drink specials will include $2.45 Brown Bag specials (a surprise can of beer inside a brown paper bag), as well as $5 Irish Car Bombs (Irish cream, Jameson Irish Whiskey and Guinness). In addition, live music featuring Margo May will take place from 4 – 7 p.m., followed by DJ Kyle Rieger from 7 – 10:30 p.m.
