Named one of the nation’s “Best Seafood Restaurants” by Travel & Leisure in 2012, the restaurant staff includes familiar, talented Kansas City faces
Kansas City, Mo. (October 6, 2014) – Jax Fish House & Oyster Bar (Jax) opened to the public on Monday, Oct. 6 in a 5,200-square-foot space at 4814 Roanoke Parkway in the Polsinelli law firm building. Jax provides guests with a dining experience unique to Kansas City, including a sustainable culinary approach recognized by the Monterey Bay Aquarium Seafood Watch program. The renowned nonprofit organization employs the elite Seafood Watch program to offer recommendations for seafood to buy or avoid, helping its partners select items that are fished in ways that have less impact on the environment. Jax will be the first restaurant in Missouri to be officially recognized as a partner of the Monterey Bay Aquarium Seafood Watch program. There are also no restaurants in Kansas currently recognized with this well-regarded distinction.
Named one of the nation’s “Best Seafood Restaurants” by Travel + Leisure in October 2012, Jax’s kitchen and bar are led by familiar faces in the Kansas City restaurant scene. Bobby Bowman, formerly the executive chef at delish! Catering & Events in Olathe, Kansas, is the executive chef. Bowman also saw multiple years in the kitchen at Webster House and Lidia’s, both in Kansas City.
By Bowman’s side as executive pastry chef is Kelly Conwell, most recently at Kansas City’s bluestem under the tutelage of Megan Garrelts. Conwell received the central region’s “Student Chef of the Year” award at the American Culinary Federation Conference in 2009 as a culinary student at Johnson County Community College.
Guiding Jax’s bar program is Kenny Cohrs, a mainstay talent in the Kansas City bar and mixology scene. Cohrs spent time at Bar Rosso and Café Trio before landing at Jax. Rick Compton, a certified sommelier and formerly of the original Jax Fish House in Boulder, Colorado, has relocated to Kansas City to fill the role of general manager and wine director.
Aligning with its commitment to sustainability, Jax features its Emersum oyster, a proprietary and wholly sustainable oyster harvested exclusively for the restaurant by the Rappahannock River Oyster Company, located off the Chesapeake Bay in eastern Virginia. Every Emersum oyster is raised in Jax’s private oyster waters, which provides a certainty of freshness and “merroir,” meaning that all Emersum Oysters will taste consistent because of the surrounding aquatic environment.
Jax also features an authentic raw bar, featuring a variety of fresh oysters, clams, chilled Alaskan King Crab, and live Maine lobsters. Also unique to Kansas City, Jax features steam jacketed kettles that cook shellfish, chowders, gumbos, stews, and pan roasts. Both the raw bar and steamer pots are located within the circular bar, just inside the front door, allowing guests to observe shucking and steaming in real time and participate in the culinary experience.
Jax also features an array of non-seafood dishes, all sourced with ingredients from local artisans, vendors and farms.

- Jumbo Lump Blue Crab Cake – grilled lemon tartar sauce
- Fruit De Mer – squid, shrimp, green lip mussels, clams, Castelvetrano olives, basil

The Jax cocktail and drink menu will include specialty wines, craft beers and cocktails, including house-made sodas, and after-dinner spirits.

Every Monday, starting on October 13, Jax offers happy hour throughout the entire restaurant during its full business hours of 4 – 10 p.m.
Jax-Sineann Pinot Noir
The Jax-Sineann Pinot Noir is a proprietary wine bottled exclusively for Jax by Sineann Winemaker Peter Rosback. It is a blend of single-vineyard lots and features the best fruit from the Columbia Gorge and Willamette Valley in Oregon. The current vintage is the 4th since the partnership commenced. The 5th vintage will arrive in early 2015.

Jax Fish House & Oyster Bar offers dinner daily: Monday – Thursday, 4 – 10 p.m.; Friday & Saturday, 4 – 11 p.m.; and Sunday, 4 – 9 p.m. Happy hour is offered daily, as well, from 4 – 6 p.m., and an all-night happy hour is offered every Monday, at any seat in the restaurant.
