BRACKENDALE, BRITISH COLUMBIA, December 9, 2014 – After a two- week closure, Fergie’s Café in Brackendale has completed its renovation and is open for business. With an expanded kitchen, new chef and a big vision for the future, Fergie’s looks forward to continuing to build its reputation as a local’s favourite and a must-visit restaurant destination.
The humble café started three years ago in a small cottage nestled amongst the trees at Sunwolf. What began small quickly grew in popularity as locals and visitors alike started flocking to Sunwolf. Before long, Fergie’s was serving up to 300 people on a busy summer weekend with guests spilling out and sitting on the grass in the nearby grounds.
What first brought people to Fergie’s was the incredible riverside location, but what keeps them coming back is the food – the sausages handmade on-site, the buttermilk biscuits and muffins baked fresh daily, and the house-smoked meat and fish. Committed to working with the nearby producers and serving only the freshest and finest, the team at Fergie’s has built relationships with local farmers such a Tracy from Stoney Mountain Farm and Mylene from Wild Mountain Farm.
Jess and Jake Freese, the owners of Sunwolf, quickly realized that Fergie’s needed to grow in order to properly serve its guests from near and far. Chef Thomas Giblin was brought in to help. With an impressive resume that boasts some of Whistler’s top restaurants including Araxi and Alta Bistro, Chef Tom designed and oversaw the building of the new commercial kitchen.
“We are so excited to see our little café in the woods develop into the funkiest eatery in the Sea to Sky. Now, with Tom on board, we have so many ideas and improvements we want to make: this renovation is just the beginning,” says Jess Freese, owner of Sunwolf and Fergie’s Café along with husband, Jake.
Chef Tom has already put his own culinary mark on Fergie’s, adding new dishes and new sausage flavours (pork, apple and cranberry; pork and spiced apricot) whilst keeping the fun twists on the usual breakfast and lunch dishes for which Fergie’s is famous. His new Veggie Bowl, with braised beans and butternut squash, caramelized red onion and kale, poached eggs, avocado and feta is a new bestseller (to which most people add a handmade sausage).
“My vision for Fergie’s is to create food that tastes amazing, but that also makes you feel amazing. The menu is full of humble and approachable food that really nourishes,” says Chef Tom Giblin of Fergie’s Café.
