Annual Tomato Dinner at Hotel Viking Celebrates Organic Heirloom Tomato Harvest With a Mouthwatering Five-Course Dinner

Newport, Rhode Island – September 2014 – One Bellevue, Hotel Viking’s popular restaurant, will celebrate the heirloom tomato harvest from Rose Hill Farm with the annual Tomato Dinner. The delicious, organically grown fruit will be the focus of a five-course menu crafted by Chef Kevin Thiele and Chef Chad Hart. “The varieties and flavors of the heirloom tomatoes grown by Rose Hill Farm are what inspired us to start having annual tomato dinners at One Bellevue,” said Chef Kevin Thiele, the Director Food & Beverage at Hotel Viking, “We source the majority of our ingredients from local providers and that makes all the difference in the flavors. Inspired recipes paired with dynamic ingredients are what make farm to fork meal like our Tomato Dinner a success.”

Chef Kevin Thiele and Chef Chad Hart have developed a tantalizing menu where tomatoes have a place in every dish from appetizers to dessert. Showcasing heirloom tomatoes as well as fresh basil, Swiss chard, squash and corn from Rose Hill Farm, a local organic family-owned farm, the 2014 Tomato Dinner includes an Heirloom Tomato Pazanella Salad with crispy pancetta, grilled kalamata bread croutons and sea salted feta; a Tagliatelle Marinara with sauce made from vine-ripened and fried green tomatoes, topped with basil; locally source grilled scallops with tomato Romesco and a Swiss chard pattie; an Oxtail Pie with grilled salsa and golden squash; and for dessert - a Parsnip Pound Cake with tomato jam, toasted pistachios and corn cream.
