Ru's Chosen as KeyBank Center's Pierogi Provider
BUFFALO, N.Y. -- Fans at Buffalo Sabres games at KeyBank Center can now look forward to sinking their teeth into the soft, chewy pillows of pierogi perfection of Ru's Pierogi, as Delaware North named Ru's its preferred pierogi provider when unveiling the center's new specialty menu items last week.
Ru’s Pierogi competed against four other contenders, but came out on top due to its “superior texture and flavor profile,” said Stephen Forman, Delaware North’s Executive Chef. Those with a penchant for pierogi can find Ru’s Cheddar Potato Pierogi incorporated into the Broadway Polish Plate (also included are smoked kielbasa and braised cabbage), available at concession stands in the 100 and 300 levels for $12. In addition, the Lexus Club will be offering Ru’s Apple Pierogi as a dessert item for $9.
“We’ve known for a while that food trends are pointing to people wanting fresh ingredients and innovative flavor combinations,” said Andy Ruszczyk, Chef at Ru’s Pierogi. “Ru’s has been doing that all along, and partnering with Delaware North, a company that shares our vision, is a natural next step. I’m so excited to bring my interpretation of modern fillings combined with my grandmother’s traditional dough recipe to Sabres fans all season long.”
According to Forman, it was a strategic decision on Delaware North’s part when developing the new menu to source locally, up the ante in terms of food quality, and think outside the box when it came to flavor combinations and ingredients. He says the process took several months, and his team looked at the entire experience, from walking up to a stand and ordering, to carrying the items back to the seats at KeyBank Center and eating them, to ensure every component passed with flying colors.
“It was important to us to capture as many local flavors, sourced from as many Buffalo-based providers, as possible, plus keep in mind the portability of each item,” he said.
Ruszczyk is enthusiastic that Sabres fans will have more choices when attending games. “Some people look forward to the traditional hot dog or nachos when watching the Sabres play, and that’s fine,” he said. “But as a foodie myself, I can’t wait to try all of Delaware North’s new offerings.”
This isn’t the first time Ru’s Pierogi has been featured at other renowned local eating establishments; Big Ditch Brewery and Liberty Hound have offered it as a menu item for years. Ru’s Pierogi launched its food truck last month at the Buffalo Bills season home opener, and the restaurant is scheduled to open within the next two weeks. The restaurant will be taking private and business catering orders shortly thereafter. All of Ru’s Pierogi are freshly made on site in its adjoining production facility.
