Modern, elegant and farm-fresh, Silo Modern Farmhouse opens Tuesday, Nov. 13 in Canyon Farms Golf Club’s clubhouse

The 6,889-square-foot restaurant will be open to the public for lunch and dinner service led by Executive Chef Laura Favela

LENEXA, Kan. (Nov. 5, 2018) – Canyon Farms Golf Club will open its new restaurant, Silo Modern Farmhouse, on Tuesday, Nov. 13 in its clubhouse at 17501 W. 87th Street Parkway. The 6,889-square-foot restaurant includes an 88-seat dining room, 14-seat bar & lounge, 80-seat patio, and three private dining rooms able to accommodate up to 32 guests. Silo Modern Farmhouse will be open to the public and offer a lunch and dinner menu, featuring an abundance of locally sourced ingredients, from Executive Chef Laura Favela.

 

Favela is leading the Silo Modern Farmhouse culinary team after three years as the executive sous chef at Craft & Draft, a gastropub that debuted in Kauffman Stadium for the 2015 season. She also spent time as a sous chef at both Hollywood Casino in Kansas City, Kansas and The Carriage Club in Kansas City, Missouri, and acts as a consultant for Simple Science Juices based in Overland Park, Kansas.

 

Favela designed the Silo Modern Farmhouse menus under the instruction of Ryan Sneed, corporate executive chef for Overland Park-based restaurant group KC Hopps. The menus feature an array of appetizers, brick oven flatbreads, gourmet sandwiches, entrées and desserts, as well as ample vegetarian and gluten-free dishes.

 

Distinctive dishes include (all available on lunch and dinner menus, unless otherwise noted):

 

Appetizers

  • Carbonara Croquettes – cavatappi pasta, local bacon, tempura fresh fish, and carne asada with grilled local corn tortillas and accoutrements
  • Grilled Royal Red Shrimp & Grits – Palmetto Farms grits, tomato-bacon jam, smoked tomato buerre blanc
  • Peruvian Octopus Ceviche* – tender poached octopus, aromatic vegetables & citrus, fresh avocado, sea salt, root chips

 

Salads

  • Silo Boston House Wedge* – tender bibb lettuce, heirloom cherry tomato, local bacon, bleu cheese, honey crisp apple, bacon-thyme buttermilk dressing
  • Salt-Smoked Beet Salad*+ – house-smoked beets, mixed greens, whipped local goat cheese, apricot vinaigrette, pistachio butter
  • Shaved Brussels* – local bacon, sherry-bacon vinaigrette, dried cherries, parmesan, pistachios

  • Buttermilk Fried Chicken – creamy coleslaw, tomato-bacon jam, house-made bread & butter pickles, herb biscuit
  • Korean Tofu Bahn Mi+ – seared local tofu, tangy slaw, pickled vegetables, jalapeños, cilantro, chile aioli, baguette

Sundays

  • Buttermilk-Thyme Fried Chicken Dinner with all the fixin’s – $15 (chef’s choice); $16 (dark meat); $17

 

Happy Hour will be offered Tuesday – Friday from 3-6 p.m. and feature $7 specialty Mules & Martinis, $7 select wines by the glass, $4 draft beers and select appetizers for $6 and $8. A Sunday brunch is planned for the near future, also. Silo Modern Farmhouse will also offer a kids menu.

 

The Silo Modern Farmhouse dining room will be overseen by General Manager Nick Owens. Owens gained the bulk of his restaurant management experience with Stilwell Enterprise & Restaurant Group, based in Captiva, Florida and recently moved to the Kansas City area to assume the general manager position at Silo Modern Farmhouse.
