South of Summit Taqueria & Tequila opens in Waldo on Feb. 6
New, casual Mexican eatery serving made-from-scratch corn tortillas and specialty margaritas
KANSAS CITY, Mo. (Feb. 6, 2020) – Restaurateurs, Andy Lock, Domhnall Molloy and Po Wang are opening their newest concept in Waldo – South of Summit Taqueria & Tequila – on Thursday, Feb. 6 at 3 p.m. South of Summit is a casual, Mexican restaurant serving made-from-scratch corn tortillas, a variety of tacos, house-made salsas, tortas, enchiladas, house-made churros and more. The restaurant, located at 516 W. 75th St. and sitting at 1,300 square feet, has a full bar, complete with an extensive mezcal and tequila list, specialty margaritas and signature cocktails.
About the Food Menu
A tortilla machine sits in the front of the restaurant with fresh tortillas prepared daily. On the menu, shareables consist of items like a Machete Quesadilla – a Mexico City specialty, Queso Fundido and Ceviche Campechana. Tacos are served a la carte with options ranging from Cheese Curd Tacos, Barbacoa Tacos, Mushroom Tacos and Al Pastor Tacos. Steak Tampiquena – grilled ribeye, poblano, onions, tomatoes, rice and beans – serves as one of the restaurants main plates. Dessert options consist of house-made Churros and Pastel De Tres Leche – sponge cake soaked in three milks, whipped cream and cinnamon, created by Summit Concepts pastry chef, Nicolette Felling.
About the Drink Menu
South of Summit has an extensive drink menu with specialty margaritas and cocktails including a Coconut Hibiscus Margarita with Ocho Plata, Cointreau, coconut cream, hibiscus and lime juice, Smoked Peach Margarita with agave de cortes mezcal, aperol, lemon juice and peach-sage simple syrup and a Patron Margarita with hand-selected barrel Reposado. The house margarita, ‘SoS Margarita’, is made with fresh lime juice, agave nectar and is available in four flavors: classic, strawberry, mango and prickly pear. A large selection of mezcal and tequila are available with an option to build your own flight and your own margarita using the liquors of your choice. Non-alcohol drinks like Topo Chico, Mexican Coke and Mexican Bottled Soda are also on the menu.
Happy hour is served daily from 3 – 6 p.m. and includes $4 house margaritas, $3 beers, and half-priced select appetizers.
South of Summit is located between Boru Ramen and Summit Grill – Waldo, occupying Summit’s former event space. The space has transformed into a casual, full-service taqueria. Hours of operation are Monday – Thursday, 11 a.m. – 10 p.m., Friday – Saturday 11 a.m. – 11 p.m., and on Sundays from 11 a.m. – 9 p.m. South of Summit welcomes guests on a first come, first served basis. Ample seating is available, however, if the restaurant is full you simply add your name and number in your party to South of Summit’s chalkboard waitlist.
South of Summit Taqueria & Tequila marks the seventh restaurant under Lock and Molloy’s portfolio. Sister concepts include Summit Grill’s three locations (Waldo, Gladstone, Lee’s Summit), Third Street Social, Boru Ramen Bar and Pearl Tavern.
