Restaurant Update: Summit Grill & Bar moving into former 75th Street Brewery space in mid-November

New space includes large private dining room; now accepting reservations for holiday events

Kansas City, Mo. (Oct. 13, 2016) – Summit Grill & Bar owners, Andy Lock and Domhnall Molloy, plan to open Summit Grill & Bar – Waldo in the former 75th Street Brewery space in mid-November. The duo first announced plans in April to expand Summit – Waldo into the new space located at 520 W. 75th street and open a ramen concept. Following Summit – Waldo’s transition, Lock and Molloy, along with their culinary director Po Wang and executive chef Thomas Paradise, will open Bōru Ramen Bar in the current Summit – Waldo space located at 500 W. 75th street. The new ramen bar plans to open in mid-December. 

Lock and Molloy agreed Summit – Waldo simply outgrew its current location. Its new location is more than double the size with 8,800 square foot, compared to its current 3,300 square foot space.  The new space has one asset the current Summit - Waldo location is missing, a large private dining space, which seats up to 54 guests. Summit Grill & Bar is currently accepting reservations for the new private dining space during the holiday season. The former 75th Street Brewery space will completely undergo renovations, which includes removing the brewery equipment, before opening.

Bōru Ramen Bar is Lock and Molloy’s newest concept, opening in the current Summit - Waldo space in mid-December. Bōru Ramen Bar will be led by Summit Grill & Bar’s current culinary director, Po Wang and current executive chef, Thomas Paradise.

Hiring for both Bōru and Summit – Waldo’s new location has begun. Lock and Molloy are currently searching for an assistant manager and chef for Summit – Waldo and all staff, front and back of house, for Bōru.
